Chicken in a Bacon Cream Sauce - schedule friendly goodness!

This delicious, creamy, tender Chicken in Bacon Cream Sauce will easily please everyone's tastes.

It's a weeknight-schedule friendly, kid-friendly, dinner-party friendly, one-pot dish that will be ready in under 60 minutes and taste like you've been cooking all day.

Ingredients:

  1. 2 lbs chicken thighs or breasts
  2. 4 strips of bacon
  3. 2 tbsp butter
  4. 1/2 diced yellow onion
  5. 4 cloves of garlic, minced
  6. 4 fl oz heavy cream
  7. Splashes of wine or water for deglazing
  8. Optional: green onion, fresh herbs
  9. Optional: sliced white mushroom

Instructions

  1. Chop (or cut with scissors) bacon into small pieces and cook over medium heat until crispy.
  2. Remove bacon and all but 1 tbsp of rendered fat from pan and set bacon aside. Save the rendered fat for cooking another day!
  3. Preheat oven to 350 degrees Fahrenheit.
  4. Add 2 tbsp of butter to pan and cook 1/2 diced yellow onion until translucent, adding salt to taste.
  5. Add minced garlic and cook until fragrant.
  6. If using mushroom, add sliced white mushrooms and cook until softened.
  7. Deglaze pan with splashes of wine or water as needed.
  8. Add chicken and brown on both sides.
  9. Cover and transfer pan to preheated oven and cook until internal temp of chicken reaches at least 160 (about 20 mins).
  10. Remove chicken from pan and set aside.
  11. Return half the bacon to the pan and add heavy cream.
  12. Stir and heat over medium heat until well combined and thickened.
  13. Return chicken to pan and stir to combine.
  14. Top with remaining crumbled bacon.
  15. Optional: top with thinly diced green onion or fresh herbs.
