It’s a quick, one-pot dinner that’s kid-friendly, weeknight-ready, and perfect for guests. Ready in under 60 minutes, this easy chicken recipe brings comforting, homemade flavor with minimal effort.

Ingredients:

  1. 2 pounds of chicken thighs or breasts
  2. 4 slices of bacon
  3. 2 tablespoons butter
  4. 1/2 yellow onion
  5. 4 garlic cloves, minced
  6. 4 fluid ounces heavy cream
  7. A few splashes of white wine or water for deglazing
  8. Optional: sliced white mushroom
  9. Optional: chopped green onions or fresh herbs (such as basil, thyme, or sage)

Instructions

  1. Chop the bacon (or cut with kitchen scissors) into small pieces and cook in a skillet over medium heat until crispy. Remove the bacon and drain, leaving about 1 tablespoon of bacon fat in the pan. Set the bacon aside and save the extra rendered fat for another use.
  2. Preheat your oven to 350°F.
  3. Add 2 tablespoons of butter to the same pan. Sauté ½ of a diced yellow onion until soft and translucent, seasoning lightly with salt. Add minced garlic and cook for another minute, just until fragrant.
  4. If using mushrooms, stir in sliced white mushrooms and cook until tender. Deglaze the pan with a splash of wine or water to lift any browned bits.
  5. Place the chicken in the pan and sear on both sides until golden. Cover and transfer the pan to the preheated oven. Bake until the internal temperature of the chicken reaches at least 160°F, about 20 minutes.
  6. Remove the chicken and set aside.
  7. Return the pan to the stovetop. Add half of the cooked bacon and pour in the heavy cream. Stir over medium heat until the sauce is smooth and thickened.
  8. Return the chicken to the pan and coat with the sauce. Sprinkle with the remaining bacon.
  9. Optional: garnish with thinly sliced green onions or fresh herbs like parsley or thyme.
